Cadbury Mini Eggs Blondies

It's almost Easter and I stocked up some of my favorite candies: Cadbury Mini Eggs! I'm hosting Easter this year and combining it with my son's 8th birthday party. I made these Cadbury Mini Eggs Blondies last year and couldn't wait to make them again this year!

These are so easy to make. You don't even have to wait for butter to soften, so it doesn't take long before they're baking in the oven. You could use any flavor of the Cadbury Mini Eggs. I used Milk Chocolate, but the Dark Chocolate would be good, too!


I also plan to make cookies with the Cadbury Mini Eggs. I'll post that recipe soon!

Cadbury Mini Eggs Blondies
Makes 16

Ingredients
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, melted
  • 1 cup packed light brown sugar
  • 1/2 cup granulated sugar
  • 1 tablespoon vanilla extract
  • 1 egg
  • 1 egg yolk
  • 2 cups Milk Chocolate Cadbury Mini Eggs
Directions

 1,  In a medium bowl, whisk together flour, baking soda and salt.

2.  In a separate bowl, cream together melted butter, brown sugar and granulated sugar.

3.  Add vanilla and eggs and mix until creamy.

4,  Slowly add in flour mixture until it is incorporated.

5,  Fold in Cadbury Mini Eggs.

6.  Spread batter into a greased 8x8 or 9x9 baking pan.

7.  Bake at 325 degrees F for about 40 minutes or until a toothpick inserted in the middle comes out clean.

8.  Cool 30 minutes before serving.
