Christmas Mint Chocolate Chip Cookies - RECIPE

It's Christmas Eve! Usually, I spend the day before Christmas Eve doing all my baking. This year, I had to work, so I'm a little behind on all my baking. My kids and I always make cookies to eat and to leave out for Santa. A favorite that we make every year are these Mint Chocolate Chip Cookies from Betty Crocker.

I usually end up making two batches of these cookies. My kids love these and I usually bring them with me when we go to my sister's for Christmas Eve.

These are super easy to make. Plus, it starts with packaged sugar cookie mix! You'll need a package of sugar cookie dough, a stick of butter (softened), creme de menthe baking chips, semisweet chocolate chunks, green food coloring, an egg and peppermint extract.


I start by stirring the sugar cookie mix and the softened butter together. It helps to cut up the butter into smaller pieces and I find just using my hand helps the dough to come together.


Once the butter and sugar cookie mix is mixed together, I add the food color, peppermint extract, and egg and mix that all together.


Next, I add a cup each of the creme de menthe baking chips and chocolate chunks. Make sure to mix it well!


Scoop about a teaspoon of dough and shape into a ball and place on a cookie sheet lined with parchment. Bake for 8-10 minutes.
