Cadbury Mini Eggs Chocolate Chip Cookies

Easter is almost here and that means Cadbury Mini Eggs are in stores! I make these cookies with them every year and usually stock up on the Cadbury Mini Eggs the day after Easter when they go on sale. My kids look forward to them every year!

Ingredients
  • 2 1/2 cups of flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 cup butter, softened
  • 3/4 cup sugar
  • 3/4 cup brown sugar
  • 2 tsp vanilla
  • 2 eggs
  • 1 cup semi-sweet chocolate chips
  • 1 package Cadbury Mini Eggs

Directions

1.  Preheat oven to 375 degrees F.

2.  In a medium bowl, stir together the flour, baking soda and salt.

3.  In a separate bowl, blend the butter, sugars and vanilla with a mixer until creamy.

4.  Add eggs, one at a time, and beat well.  Gradually, add the flour mixture until just combined. Stir in the chocolate chips.

5.  Drop by rounded teaspoon onto a baking sheet covered with parchment paper. I wanted big cookies, so I probably doubled that amount of dough.

6.  Place 3 or 4 Cadbury Mini Eggs on top of each cookie round.



7.  Bake 9-11 minutes or until lightly browned. Since my cookies were so big, they actually took about 15 minutes. My husband likes them crispy, so he actually put some back in until they were really brown on the edges.
